Almond Pancakes       
 
Prep time:

Cooking time: 
10 minutes
 
Yields: 
4 people
 
Ingredients: 
1 egg
1 1/2 cups almond, rice or soy milk
1/4 cup canola oil
1 3/4 cups oat or whole wheat pastry flour
1/2 cup almonds, finely chopped
1 tablespoon non-aluminum baking powder
1/2 teaspoon sea salt
 
Directions: 
Mix egg, milk and oil in a medium-size bowl.
Mix flour, almonds, baking powder and salt into a small bowl.
Combine dry ingredients into the wet ingredients.
Mix until dry ingredients are moistened.
Using a 1/4 - 1/2 cup measuring cup drop pancakes onto a lightly oiled skillet and cook until golden brown on both sides.
Serve warm with maple syrup or honey.
 
Notes: 
Try 1/2 cup of shredded coconut and/or1/4 cup malt-sweetened chocolate chips instead of almonds.
Try a little lemon zest, the juice of one lemon (add a little less milk) and 1/2 cup poppy seeds for lemon poppy seed pancakes.

Why You Should Eat More Cucumbers
Cucumbers have much more to offer than simple eye covers during a spa treatment!  Cucumbers are a wealth of vitamins and minerals that positively affect everything from flushing out toxins to eliminating bad breath.  Cucumbers have vitamins A, and C to promote robust immune systems, vitamin K for healthy blood, magnesium, potassium, and silicon for healthy skin, and sterols that can lower blood cholesterol just to name a few benefits.  They are anti-inflammatory and have anti-oxidant properties (thus the popular use of cucumber slices over the eyelids).

The silica found in cucumbers is especially important for those experiencing joint pain or arthritis as it helps to repair and strengthen connective tissue.  Silica is also a component in healthy hair and nails (another reason you see them so often in the beauty industry).

In addition to this Strawberry and Cucumber salad, my other favorite ways to eat cucumbers are:
  • slice them into "chips" and use with avocado dips or tuna salad
  • add a few slices to your water bottle
When purchasing cucumbers, look for smooth skin with no dimples.  It's also a good idea to buy organic when you can since cucumbers tend to be grown with a lot of pesticides!

Strawberry Cucumber Salad

 

Simplicity and freshness are the heroes in this salad that is as lovely to look at as it is to eat.

 

Ingredients

4½ cups (1½ pounds) California strawberries, stemmed and quartered
1 medium cucumber, peeled, seeded and cut into ½-inch dice
¾ cup Italian parsley leaves
4 green onions, chopped
6 radishes, thinly sliced

2 cups of spinach

Vinaigrette:
3 tablespoons rice vinegar
1½ teaspoons chopped fresh dill
1½ teaspoons chopped fresh mint
½ teaspoon ground cumin
½ teaspoon sweet paprika
½ teaspoon salt
¼ cup extra virgin olive oil

Directions

To make salad: In large bowl, toss salad ingredients with vinaigrette until coated. Mound salad on 6 chilled plates, dividing it equally. Serve immediately. To make vinaigrette: In bowl, whisk together all vinaigrette ingredients except oil. Whisk in oil until blended. Makes 6 servings.
